BEET SALAD

SALAD
  • 1 cup shredded beets
  • ½ cup red bell pepper, thinly sliced
  • ¼ cup soaked peanuts
  • ¼ teaspoon ginger
  • salt and pepper
  • a little lemon juice
  • 1 teaspoon of honey
  • 2 tablespoons of grated coconut

Combine all ingredients in a bowl.

DRESSING

  • 2 tablespoons oil (I prefer coconut)

  • 1 teaspoon of mustard seeds

  • 1 teaspoon of ground cumin

Heat the oil in a pan.

Once the oil is heated, put the mustard seeds in the pan.

Allow the seeds to crack for a while then add the cumin and remove from the heat. Let cool and use to dress the salad.
